Mutton Biryani Recipe with Neyyar Food Products

Ingredients
For the Mutton Marination:
- ½ kg mutton (bone-in, washed and drained)
- ½ cup yogurt
- 1 tbsp Neyyar Turmeric Powder
- 1 tbsp Neyyar Coriander Powder
- 1 tbsp Neyyar Chilly Powder
- 1 tbsp ginger-garlic paste
- ½ tsp salt
- 2 tbsp lemon juice
For the Rice:
- 2 cups basmati rice (soaked for 30 minutes)
- 4 cups water
- 1 bay leaf
- 2-3 cloves
- 2-3 cardamom pods
- 1-inch cinnamon stick
- ½ tsp salt
For the Biryani Masala:
- 3 tbsp ghee or oil
- 2 onions (thinly sliced)
- 2 tomatoes (chopped)
- 1 tbsp Neyyar Sambar Powder (for added depth of flavor)
- 1 tsp Neyyar Chilly Powder (adjust to taste)
- 1 tbsp Neyyar Coriander Powder
- 1 tsp garam masala
- ½ cup mint leaves (chopped)
- ½ cup coriander leaves (chopped)
- ½ cup warm milk with saffron strands (for color and aroma)
- 1 tbsp fried onions (for garnish)
Instructions
Step 1: Marinating the Mutton
- In a large bowl, mix yogurt, Neyyar Turmeric Powder, Neyyar Chilly Powder, Neyyar Coriander Powder, ginger-garlic paste, salt, and lemon juice.
- Add the cleaned mutton pieces, coat well, and let it marinate for at least 1-2 hours (preferably overnight for better flavor).
Step 2: Cooking the Rice
- In a large pot, bring water to a boil and add bay leaf, cloves, cardamom, cinnamon, and salt.
- Add the soaked rice and cook until 70% done (the grains should still have a bite). Drain and set aside.
Step 3: Preparing the Mutton Gravy
- Heat ghee or oil in a large, heavy-bottomed pan.
- Add sliced onions and sauté until golden brown.
- Add tomatoes and cook until soft.
- Mix in Neyyar Sambar Powder, Neyyar Chilly Powder, Neyyar Coriander Powder, and garam masala. Stir well.
- Add the marinated mutton and cook on medium heat until the meat is tender (add water if necessary).
- Stir in chopped mint and coriander leaves for freshness.
Step 4: Layering the Biryani
- In a heavy-bottomed pot, layer half of the cooked rice over the mutton gravy.
- Drizzle half of the saffron milk and some fried onions.
- Add the remaining rice and top with the rest of the saffron milk, fried onions, and a little ghee.
- Cover with a tight lid and cook on low heat (dum) for 20-25 minutes.
Step 5: Serving
- Gently mix the biryani before serving.
- Garnish with more fried onions, fresh coriander, and mint leaves.
- Serve hot with raita and salad.
